Arugula Pasta Salad

 Serves 2
1 tablespoon honey
1 tablespoon dijon mustard
1 tablespoon walnut oil
1 tablespoon lemon juice
Sea salt & pepper, to taste

2 ounces dry whole grain penne pasta
4 cups loosely packed arugula
1 cup grape tomatoes, halved
¾ cup canned white beans, rinsed & drained
4 tablespoons chopped walnuts


 Prep: 10 minutes / Start to Finish: 20 minutes
Whisk honey, dijon, oil, lemon juice, salt and pepper. Cook/drain pasta according to directions on package. Toss hot pasta with remaining ingredients. Serve warm, room temperature or cold.

 1 serving = 3 cups pasta w/ 2 tablespoons dressing
